Ingredients

  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 large potatoes, peeled and diced
  • 1 medium cauliflower, cut into florets
  • 2 tomatoes, chopped
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1 tsp garam masala
  • 1/2 tsp red chili powder (optional, for heat)
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)
  • Lemon wedges (optional, for serving)

Instructions

  1. Sauté the aromatics: Heat the vegetable oil in a large skillet or wok over medium heat. Add the cumin seeds and let them sizzle for a few seconds until fragrant. Add the chopped onion and cook for 4-5 minutes until soft and golden. Stir in the garlic and ginger, cooking for another 1-2 minutes.
  2. Cook the vegetables: Add the diced potatoes to the pan and sauté for 5 minutes. Then add the cauliflower florets and tomatoes. Stir to combine.
  3. Add the spices: Stir in the turmeric, ground coriander, ground cumin, garam masala, red chili powder (if using), and salt. Mix everything well, ensuring the vegetables are coated with the spices.
  4. Simmer: Cover the pan and let the vegetables cook on low heat for 15-20 minutes, stirring occasionally, until the potatoes and cauliflower are tender. If needed, add a splash of water to prevent sticking.
  5. Garnish and serve: Once the vegetables are fully cooked, garnish with fresh cilantro. Serve hot with lemon wedges on the side, and enjoy with naan, roti, or rice.

Aloo Gobi is a flavorful and nutritious dish that brings together the simple ingredients of cauliflower and potatoes, elevated with the warmth and depth of Indian spices!
