Peach Scones

Peach Scones are a delightful and tender pastry that combines the sweet, juicy flavor of fresh peaches with the buttery, flaky texture of traditional scones. These scones are perfect for breakfast, brunch, or an afternoon snack, offering a delicious balance of sweetness and richness in every bite. With chunks of ripe peaches folded into the dough and a hint of cinnamon or vanilla for extra warmth, these scones are a lovely way to enjoy seasonal fruit. Serve them warm with a drizzle of honey or a smear of butter for an extra indulgent treat.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp ground cinnamon (optional)
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup heavy cream or whole milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup fresh peaches, diced
  • Extra sugar for sprinkling on top

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix the dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, cinnamon (if using), and salt.
  3. Cut in the butter: Add the cold, cubed butter to the dry ingredients and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
  4. Add the wet ingredients: In a small bowl, whisk together the heavy cream (or milk), egg, and vanilla extract. Pour the wet ingredients into the flour mixture and stir until just combined.
  5. Fold in the peaches: Gently fold the diced peaches into the dough, being careful not to overmix.
  6. Shape the scones: Turn the dough out onto a floured surface and gently shape it into a circle about 1 inch thick. Cut the dough into 8 wedges and transfer them to the prepared baking sheet.
  7. Bake the scones: Brush the tops of the scones with a little extra cream or milk and sprinkle with sugar. Bake for 15-18 minutes, or until the scones are golden brown on top and cooked through.
  8. Serve: Let the scones cool slightly before serving. Enjoy them warm, plain, or with butter or honey.

These Peach Scones are a sweet, fruity twist on a classic scone recipe, perfect for enjoying the flavors of summer in a soft and flaky pastry!
