Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef or turkey
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional, for heat)
  • Salt and black pepper to taste
  • 1 cup beef or chicken broth
  • 1 tsp sugar (optional, to balance acidity)
  • Toppings: shredded cheese, sour cream, green onions (optional)

Instructions

  1. Brown the meat: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef or turkey and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  2. Cook the vegetables: Add the diced onion, bell pepper, and garlic to the pot, cooking for 5-7 minutes until the vegetables are softened and fragrant.
  3. Add spices and liquids: Stir in the chili powder, cumin, smoked paprika, cayenne (if using), salt, and black pepper. Cook for 1 minute to toast the spices. Then add the diced tomatoes, tomato sauce, broth, and sugar. Stir well to combine.
  4. Simmer the chili: Add the red kidney beans to the pot and bring the chili to a simmer. Lower the heat and let it simmer gently for 25-30 minutes, stirring occasionally, until the flavors have melded and the chili has thickened.
  5. Serve: Ladle the chili into bowls and top with shredded cheese, sour cream, green onions, or your favorite toppings. Serve with cornbread or tortilla chips for dipping.

This Red Bean Chili is a comforting and delicious dish that’s full of bold flavors, perfect for cozy nights or casual gatherings with friends and family!
