  • 2 medium sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and black pepper, to taste
  • 1 (15 oz) can black beans, drained and rinsed
  • 8 small flour or corn tortillas
  • 1 (15 oz) can red enchilada sauce
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 1/4 cup chopped fresh cilantro (optional, for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roast the Sweet Potatoes:
    • Toss the diced sweet potatoes with olive oil, chili powder, cumin, salt, and pepper. Spread them evenly on the prepared baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized. Remove from the oven and reduce the temperature to 350°F (175°C).

  4. Assemble the Enchiladas:
    • Spread a small amount of enchilada sauce on the bottom of a greased 9×13-inch baking dish. Spoon the sweet potato and black bean mixture into each tortilla, roll them up, and place them seam-side down in the dish.
  5. Top with Sauce and Cheese:
    • Pour the remaining enchilada sauce over the rolled tortillas, making sure they are evenly coated. Sprinkle the shredded cheese on top.
  6. Bake:
    • Bake the enchiladas for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Serve:
    • Garnish with fresh cilantro if desired, and serve warm with your favorite toppings like sour cream, guacamole, or salsa.
