SPINACH QUESADILLAS

Ingredients:

  • Salsa, guacamole, or sour cream for serving

Instructions:

  1. Sauté the spinach: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the spinach leaves and cook until just wilted, about 2-3 minutes. Season with salt and pepper to taste. If using additional vegetables like mushrooms or onions, sauté them with the spinach.
  2. Assemble the quesadillas: Lay out two tortillas on a flat surface. Sprinkle half of the shredded cheese evenly over each tortilla. Top with the sautéed spinach (and any additional vegetables), then sprinkle the remaining cheese on top. Place the other tortillas on top to form the quesadillas.
  3. Cook the quesadillas: Wipe out the skillet used for the spinach and heat it over medium heat. Carefully place one of the quesadillas in the skillet. Cook for 2-3 minutes on each side, or until the tortillas are golden brown and crispy, and the cheese is melted. Repeat with the second quesadilla.
  4. Serve: Slice the quesadillas into wedges and serve hot with salsa, guacamole, or sour cream.
