Romesco Sauce

Romesco sauce is a vibrant and flavorful Spanish sauce hailing from the Catalonia region, traditionally served with grilled fish or roasted vegetables. Its rich, smoky flavor comes from roasted red peppers, nuts (usually almonds or hazelnuts), garlic, and tomatoes, which are blended into a smooth and creamy consistency. The addition of sherry vinegar gives it a tangy kick, while smoked paprika adds depth and a slight spiciness. Romesco is versatile, making it an excellent accompaniment for meats, seafood, or even as a dip for crusty bread. It’s easy to prepare and keeps well in the refrigerator for a few days, allowing the flavors to deepen even more over time.

Ingredients:

  • 2 large roasted red bell peppers (jarred or freshly roasted)
  • 1/2 cup toasted almonds or hazelnuts
  • 2 medium tomatoes, roasted or grilled
  • 3 cloves garlic
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon sherry vinegar
  • 1 teaspoon smoked paprika
  • 1 slice of crusty bread, toasted (optional for added thickness)
  • Salt and pepper, to taste
  • Red pepper flakes or cayenne pepper, to taste (optional, for heat)

Instructions:

  1. Prepare the ingredients: If you’re roasting the bell peppers and tomatoes yourself, preheat your oven to 400°F (200°C). Place the peppers and tomatoes on a baking sheet and roast for 20-25 minutes, until the skins blister. Let them cool, then peel and deseed the peppers. Set aside.
  2. Toast the nuts: In a dry skillet, lightly toast the almonds or hazelnuts over medium heat until fragrant and golden. Set aside to cool.
  3. Blend the sauce: In a food processor or blender, combine the roasted bell peppers, tomatoes, garlic, toasted nuts, and toasted bread slice (if using). Pulse until the mixture is finely chopped.
  4. Add the seasoning: While the blender is running, slowly drizzle in the olive oil to create a smooth, creamy sauce. Add the sherry vinegar, smoked paprika, and season with salt, pepper, and red pepper flakes (if using).
  5. Adjust the consistency: If the sauce is too thick, you can add a tablespoon or two of water to reach your desired consistency. Blend until smooth.
  6. Serve and enjoy: Taste the Romesco sauce and adjust the seasoning as needed. Serve immediately or refrigerate for a few hours to let the flavors meld.

Romesco sauce pairs wonderfully with grilled vegetables, meats, or seafood, and can also be used as a spread for sandwiches or a dip for bread.
