Ingredients:

  • 4 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 2 garlic cloves, minced
  • 1-inch piece of fresh ginger, grated
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 cup snow peas
  • 2 green onions, chopped
  • 1 tbsp cornstarch mixed with 2 tbsp water (optional for thickening)
  • Cooked jasmine rice or noodles for serving
  • Sesame seeds and chopped cilantro for garnish (optional)

Instructions:

  1. Marinate the Chicken: In a medium bowl, whisk together the soy sauce, hoisin sauce, honey, rice vinegar, garlic, ginger, and sesame oil. Add the chicken pieces, toss to coat, and let marinate for at least 20 minutes (or up to an hour for more flavor).
