Green Shakshuka

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 6 cups fresh spinach (or a mix of spinach and kale), roughly chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup vegetable or chicken broth
  • 1/4 cup heavy cream (optional for a creamier sauce)
  • 4-6 large eggs
  • Salt and pepper, to taste
  • Crumbled feta or goat cheese (optional)
  • Crusty bread, for serving

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 5-7 minutes, until soft and translucent.
  2. Stir in the minced garlic, cumin, coriander, and turmeric, and cook for another 1-2 minutes until fragrant.
  3. Add the chopped spinach, cilantro, and parsley to the pan, stirring until the greens are wilted, about 2-3 minutes.
  4. Pour in the vegetable or chicken broth and bring the mixture to a simmer. If you want a creamier shakshuka, stir in the heavy cream at this point.
  5. Using the back of a spoon, make small wells in the greens mixture and gently crack an egg into each well. Season with salt and pepper.
  6. Cover the skillet and cook for 5-7 minutes, or until the eggs are set to your desired doneness. For runny yolks, check around 5 minutes; for firmer yolks, cook closer to 7 minutes.
  7. Optional: Sprinkle crumbled feta or goat cheese over the top for added richness.
  8. Serve the Green Shakshuka hot, with crusty bread for dipping.
