Zuppa Inglese

Zuppa Inglese is a classic Italian dessert that beautifully layers rich custard, sponge cake or ladyfingers, and a hint of liqueur. Often compared to trifle, this elegant dessert features a velvety pastry cream in two flavors—vanilla and chocolate—interspersed with liqueur-soaked cake, traditionally Alchermes or another Italian liqueur, which gives the dessert its distinctive taste and vibrant color. Ingredients:

For the Custard:

  • 4 cups whole milk
  • 8 egg yolks
  • 1 cup granulated sugar
  • ½ cup all-purpose flour
  • 1 tsp vanilla extract
  • 2 tbsp unsweetened cocoa powder (for chocolate layer)

For Assembly:

  • 24 ladyfingers or slices of sponge cake
  • ½ cup Alchermes (or another red liqueur like raspberry liqueur)
  • Whipped cream for garnish (optional)
  • Fresh berries for garnish (optional)

Instructions:

  1. Make the Custard: In a medium saucepan, heat the milk over low heat until warm but not boiling. In a separate bowl, whisk together the egg yolks and sugar until pale and creamy. Gradually whisk in the flour until smooth.
  2. Slowly pour the warm milk into the egg mixture while whisking constantly to temper the eggs. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens to a custard-like consistency (about 5-7 minutes). Remove from heat and stir in the vanilla extract.
  3. Divide the Custard: Split the custard in half. Leave one portion plain for the vanilla layer, and to the other half, whisk in the cocoa powder to create the chocolate custard.
  4. Assemble the Zuppa Inglese: In a serving dish or individual glasses, start with a layer of ladyfingers or sponge cake. Brush the cake with the Alchermes liqueur until well-soaked but not soggy.
  5. Spread a layer of vanilla custard over the soaked cake, followed by another layer of liqueur-soaked cake. Top with the chocolate custard.
  6. Repeat the layers as desired, finishing with a custard layer on top. Refrigerate for at least 2 hours to allow the flavors to meld.
  7. Garnish and Serve: Before serving, garnish with whipped cream and fresh berries if desired.
