Zucchini & Sweet Potato Fritters

Ingredients:

  • 2 medium zucchinis, grated
  • 1 medium sweet potato, peeled and grated
  • 1 small onion, finely chopped
  • 2 eggs, lightly beaten
  • 1/2 cup all-purpose flour (or gluten-free flour)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 2–3 tablespoons olive oil, for frying

Instructions:

  1. Prepare the Vegetables: Grate the zucchinis and sweet potato into a large bowl. Sprinkle with a pinch of salt and let sit for 10 minutes. This helps to draw out excess moisture. After 10 minutes, place the vegetables in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible.
  2. Mix the Batter: In a large mixing bowl, combine the grated vegetables, chopped onion, beaten eggs, flour, Parmesan cheese (if using), garlic powder, smoked paprika, salt, and black pepper. Stir until well combined. The mixture should hold together when pressed; if it’s too wet, add a little more flour.
  3. Fry the Fritters: Heat olive oil in a large skillet over medium heat. Using a spoon or small scoop, drop portions of the batter into the hot oil and flatten gently with a spatula to form fritters. Cook for 3–4 minutes on each side, or until golden brown and crispy. Work in batches to avoid overcrowding the pan.
  4. Drain and Serve: Transfer the fritters to a plate lined with paper towels to drain any excess oil. Serve warm with your favorite dipping sauce or a dollop of sour cream.
