Zucchini Lasagna Rolls
Ingredients:
- 3 large zucchinis, thinly sliced lengthwise (use a mandoline or knife)
- 1 ½ cups ricotta cheese
- 1 cup shredded mozzarella cheese, divided
- ¼ cup grated Parmesan cheese
- 1 egg
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 2 cups marinara sauce
- Fresh basil, for garnish (optional)
- Salt and pepper to taste
Instructions:
- Preheat oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Prepare the zucchini slices: Slice the zucchinis lengthwise into thin strips about 1/8-inch thick. Lightly salt the slices and place them on paper towels for 10 minutes to draw out moisture. Pat dry.
- Make the ricotta filling: In a medium bowl, combine the ricotta cheese, ½ cup of the shredded mozzarella, Parmesan, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until smooth and well combined.
- Assemble the rolls: Spread a thin layer of marinara sauce on the bottom of the prepared baking dish. Take one zucchini slice and spread a spoonful of the ricotta mixture down the length of the slice. Roll it up gently and place it seam-side down in the baking dish. Repeat with the remaining zucchini slices.
- Top with sauce and cheese: Pour the remaining marinara sauce over the top of the zucchini rolls. Sprinkle with the remaining ½ cup of shredded mozzarella cheese.
- Bake: Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Serve: Garnish with fresh basil if desired, and serve the Zucchini Lasagna Rolls warm.
