Zucchini Fritters

Ingredients:

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup all-purpose flour
  • 1/4 cup breadcrumbs
  • 2 eggs, lightly beaten
  • 2 cloves garlic, minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)
  • 2 tablespoons chopped fresh herbs (such as parsley, dill, or chives)
  • Olive oil, for frying

Instructions:

  1. Prepare the Zucchini: Place the grated zucchini in a colander and sprinkle with salt. Toss to combine and let sit for about 10 minutes to draw out excess moisture. After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out as much liquid as possible.
  2. Mix the Batter: In a large bowl, combine the drained zucchini, Parmesan cheese, flour, breadcrumbs, eggs, garlic, black pepper, paprika (if using), and fresh herbs. Stir until all ingredients are well incorporated.
  3. Form the Fritters: Heat a few tablespoons of olive oil in a large skillet over medium heat. Scoop about 2 tablespoons of the zucchini mixture for each fritter and drop it into the hot oil. Use the back of the spoon to flatten the fritter slightly.
  4. Cook the Fritters: Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat as necessary to prevent burning.
