Yankee Rancheros is a creative blend that marries the robust flavors of traditional huevos rancheros with a distinctive New England twist. Yankee Rancheros

Ingredients:

  • 4 slices of bacon, chopped
  • 1 small onion, finely diced
  • 1 clove garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) baked beans
  • 1 can (14.5 ounces) diced tomatoes with green chilies
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 4 large eggs
  • 4 corn or flour tortillas
  • 1/4 cup shredded cheddar cheese (optional)
  • Fresh cilantro, chopped, for garnish
  • Hot sauce, for serving

Instructions:

  1. Cook the Bacon:
    • In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the skillet.
  2. Sauté the Vegetables:
    • Add the diced onion to the skillet with the bacon fat and sauté until softened, about 3-4 minutes. Add the minced garlic and cook for another 1 minute.
  3. Prepare the Bean Mixture:
    • Stir in the black beans, baked beans, diced tomatoes with green chilies, cumin, and smoked paprika. Season with salt and pepper to taste.
    • Bring the mixture to a simmer and cook for 5-7 minutes, until the sauce thickens slightly and the flavors meld together.
  4. Cook the Eggs:
    • In a separate non-stick skillet, fry the eggs to your desired doneness (sunny-side-up is traditional for rancheros). You can also scramble them if you prefer.
  5. Assemble the Yankee Rancheros:
    • Warm the tortillas in a dry skillet or in the oven until pliable.
    • Place a tortilla on each plate and spoon the bean mixture over the top. Place a fried egg on top of the beans.
    • Sprinkle with the cooked bacon, shredded cheddar cheese (if using), and fresh cilantro.
