Wyoming Stew

Wyoming Stew is a hearty and flavorful dish inspired by the rugged landscapes and cowboy traditions of the American West. Ingredients:

  • 2 lbs beef stew meat, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup water
  • 4 large potatoes, peeled and diced
  • 3 large carrots, peeled and sliced
  • 2 stalks celery, chopped
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup frozen peas
  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)

Instructions:

  1. In a large Dutch oven or heavy pot, heat the vegetable oil over medium-high heat. Add the beef stew meat in batches, browning on all sides. Remove the beef and set it aside.
  2. In the same pot, add the chopped onion and garlic, and sauté until softened, about 5 minutes.
  3. Return the browned beef to the pot. Add the beef broth, water, potatoes, carrots, celery, diced tomatoes (with their juice), Worcestershire sauce, thyme, rosemary, and bay leaf. Stir to combine.
  4. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through. Stir occasionally.
  5. Season the stew with salt and pepper to taste. Add the frozen peas and cook for an additional 10 minutes.
  6. If you prefer a thicker stew, mix the cornstarch with 2 tablespoons of water in a small bowl to create a slurry. Stir the slurry into the stew and cook until thickened, about 5 minutes.
  7. Remove the bay leaf and serve the stew hot with crusty bread or over mashed potatoes, if desired.
