Ingredients:

  • 2 lbs ground beef
  • 1 large onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cans (14.5 oz each) diced tomatoes with green chilies
  • 1 can (6 oz) tomato paste
  • 2 cups beef broth
  • 1/4 cup chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 1/2 tsp cayenne pepper (optional for extra heat)
  • 1 tsp sugar
  • Salt and pepper to taste
  • 1 cup shredded Wisconsin sharp cheddar cheese
  • Sour cream, for garnish
  • Sliced green onions, for garnish
  • Tortilla chips or cornbread, for serving

Instructions:

  1. Brown the Beef: In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Sauté Vegetables: Add the diced onion, green bell pepper, and red bell pepper to the pot. Sauté until the vegetables are softened, about 5-7 minutes. Add the minced garlic and cook for an additional minute.
  3. Add Tomatoes and Beans: Stir in the diced tomatoes with green chilies, tomato paste, kidney beans, and black beans. Mix well to combine.
  4. Season the Chili: Pour in the beef broth, then stir in the chili powder, cumin, smoked paprika, oregano, cayenne pepper (if using), sugar, salt, and pepper. Bring the mixture to a simmer.
  5. Cook the Chili: Reduce the heat to low, cover the pot, and let the chili simmer for at least 30 minutes, stirring occasionally. For a richer flavor, let it simmer for up to an hour.
  6. Serve: Ladle the chili into bowls and top with shredded Wisconsin cheddar cheese, a dollop of sour cream, and sliced green onions. Serve with tortilla chips or cornbread on the side.
