WATERMELON CAKE

This Watermelon Cake is a refreshing, healthy, and stunning dessert that’s perfect for summer parties or as a light, guilt-free treat. Made with a large watermelon as the “cake” and decorated with whipped cream and fresh fruits, it’s both beautiful and delicious without the need for baking.

Ingredients:

  • 1 large seedless watermelon
  • 2 cups whipped cream (or coconut whipped cream for a dairy-free option)
  • Fresh fruit for decoration (such as strawberries, blueberries, kiwi, or raspberries)
  • Toasted almonds, shredded coconut, or chopped nuts (optional)
  • Fresh mint leaves (for garnish, optional)

Instructions:

  1. Prepare the watermelon:
    • Slice off both ends of the watermelon to create a flat top and bottom. Stand the watermelon upright and carefully cut away the rind, leaving only the red flesh. Shape the watermelon into a smooth, round cake-like cylinder.
  2. Pat dry:
    • Use paper towels to pat the surface of the watermelon dry. This helps the whipped cream stick better.
  3. Frost the watermelon:
    • Using a spatula, spread the whipped cream evenly around the sides and top of the watermelon, just like you would frost a cake. You can smooth it out for a clean finish or leave it a bit textured for a more rustic look.
  4. Decorate with fruit:
    • Arrange fresh fruit around the top and sides of the cake. You can create a pattern with sliced strawberries, kiwi, blueberries, or raspberries, or use any fruit combination you like. For added texture and flavor, sprinkle toasted almonds, shredded coconut, or chopped nuts around the edges.
  5. Garnish and serve:
    • Garnish with fresh mint leaves for a beautiful, fragrant finish. Refrigerate the cake until ready to serve.

Enjoy this stunning and refreshing Watermelon Cake as a healthy dessert that’s perfect for hot summer days or as a show-stopping centerpiece at your next party!
