Warm Cauliflower Salad

Warm Cauliflower Salad is a vibrant and hearty dish that combines roasted cauliflower with a medley of colorful ingredients to create a filling and flavorful side or main course. This salad often includes ingredients like red onions, capers, and perhaps some greens like arugula or spinach, which add a peppery bite. The cauliflower is typically tossed with spices and olive oil, then roasted until golden and tender. It’s then mixed with additional elements such as sun-dried tomatoes, nuts, or seeds, and dressed with a tangy vinaigrette or lemon juice to enhance the flavors.

    • 1 tablespoon vinegar or lemon juice
    • 1 teaspoon mustard
    • Salt and pepper to taste

  2. Prepare other ingredients: While the cauliflower roasts, prepare the onion, capers, and sun-dried tomatoes.
  3. Make dressing: Whisk together olive oil, vinegar or lemon juice, mustard, salt, and pepper.
  4. Combine and serve: Mix the roasted cauliflower with the onion, capers, sun-dried tomatoes, and greens if using. Drizzle with dressing and serve warm.
