Vitamix Hummus Recipe

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • ¼ cup tahini
  • 2 tbsp olive oil
  • 2-3 tbsp lemon juice (to taste)
  • 1-2 garlic cloves, minced
  • ¼ tsp ground cumin
  • ½ tsp salt (or to taste)
  • 2-3 tbsp water (or more, for consistency)
  • Paprika, olive oil, and parsley for garnish (optional)

Instructions:

  1. Add the chickpeas, tahini, olive oil, lemon juice, garlic, cumin, and salt to your Vitamix blender.
  2. Start the blender on low and gradually increase the speed to high, blending until the mixture becomes smooth. If the hummus is too thick, add water a tablespoon at a time until you reach your desired consistency.
  3. Taste and adjust seasoning, adding more salt or lemon juice as needed.
  4. Transfer the hummus to a serving bowl and drizzle with olive oil, sprinkle with paprika, and garnish with fresh parsley, if desired.
