Ingredients:

  • 4 large Vidalia onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1/2 cup Ritz cracker crumbs or breadcrumbs
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Parmesan cheese
  • 1 cup sour cream
  • 1/4 cup mayonnaise
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika (optional)
  • 1/4 cup chopped fresh parsley (optional, for garnish)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, melt the butter over medium heat. Add the sliced Vidalia onions and cook, stirring occasionally, until the onions are soft and lightly caramelized, about 15-20 minutes.
  3. While the onions are cooking, combine the sour cream, mayonnaise, salt, pepper, and garlic powder in a large mixing bowl.
  4. Once the onions are caramelized, remove them from the heat and let them cool slightly. Stir the onions into the sour cream mixture until well combined.
  5. Grease a 9×13-inch baking dish and spread the onion mixture evenly in the dish.
  6. In a separate bowl, mix the Ritz cracker crumbs with the shredded cheddar and Parmesan cheeses. Sprinkle this mixture evenly over the onions.
  7. If desired, sprinkle paprika over the top for a bit of color and flavor.
  8. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
  9. Remove the casserole from the oven and let it cool for a few minutes before serving.
  10. Garnish with chopped fresh parsley if desired.

Serve your Vidalia Casserole hot, and enjoy the sweet, savory, and cheesy goodness of this delightful dish!
