  • 1/2 cup salsa or pico de gallo
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges, for serving
  • Optional toppings: sour cream, shredded cheese, hot sauce, pickled jalapeños

Instructions:

  1. Sauté the Vegetables: Heat olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, cooking for 3-4 minutes until softened. Add the zucchini and corn, and cook for another 4-5 minutes until the vegetables are tender.
