Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 carrot, peeled and finely chopped
  • 1 zucchini, diced
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (14 ounces) tomato sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 tablespoon sugar (optional, to balance acidity)
  • Fresh basil or parsley, chopped (for garnish, optional)

Instructions:

  1. Sauté the Vegetables: Heat the olive oil in a large skillet or saucepan over medium heat. Add the chopped onion and cook until softened and translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1 minute.
  2. Add the Bell Peppers and Carrot: Add the diced red and yellow bell peppers, and chopped carrot to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the vegetables start to soften.
  3. Incorporate the Zucchini: Add the diced zucchini and cook for another 3-4 minutes until all the vegetables are tender.
  4. Combine with Tomatoes and Seasonings: Stir in the crushed tomatoes, tomato sauce, and tomato paste. Add the dried basil, oregano, thyme, salt, and black pepper. If desired, add the sugar to balance the acidity of the tomatoes.
  5. Simmer the Sauce: Bring the sauce to a simmer, then reduce the heat to low. Cover and let it cook for 20-30 minutes, stirring occasionally, to allow the flavors to meld together.
  6. Finish and Serve: Taste and adjust the seasoning if needed. Garnish with fresh basil or parsley before serving. Enjoy the sauce over your favorite pasta.

This Vegetarian Pasta Sauce is a versatile and flavorful addition to any pasta dish, offering a hearty and satisfying option that’s both nutritious and delicious.
