Ingredients

For the rolls:

  • 8–10 rice paper wrappers
  • 1 medium cucumber, julienned
  • 1 medium carrot, julienned
  • 1 bell pepper (any color), julienned
  • 1 cup shredded red cabbage
  • 1 avocado, sliced
  • 1 cup fresh herbs (mint, cilantro, and/or basil)
  • 1 cup spinach or lettuce leaves
  • Optional: cooked rice noodles or tofu strips

For the peanut dipping sauce:

  • 1/4 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tsp rice vinegar
  • 1–2 tbsp warm water (to thin as needed)
  • Optional: pinch of chili flakes or sriracha for heat

Instructions

  1. Prepare the vegetables: Slice all vegetables thinly to make rolling easier. Arrange the vegetables, herbs, and optional fillings like rice noodles or tofu in separate bowls.
  2. Make the dipping sauce: In a small bowl, whisk together the peanut butter, soy sauce, hoisin sauce, rice vinegar, and warm water until smooth. Adjust consistency with more water if necessary, and add chili flakes or sriracha for spice.
  3. Set up rolling station: Fill a large shallow dish with warm water. Dip a rice paper wrapper into the water for about 5–10 seconds, until it’s soft but not too floppy. Place the softened wrapper on a clean surface, like a cutting board.
  4. Assemble the roll: Place a small amount of each vegetable, herbs, and any optional fillings in the center of the wrapper. Fold the bottom of the wrapper over the filling, then fold in the sides and roll up tightly. Repeat with remaining ingredients.
  5. Serve: Slice each roll in half (optional) and arrange on a platter. Serve with the peanut dipping sauce on the side.
