For the peanut dipping sauce:
- 1/4 cup peanut butter
- 2 tbsp soy sauce
- 1 tbsp hoisin sauce
- 1 tsp rice vinegar
- 1–2 tbsp warm water (to thin as needed)
- Optional: pinch of chili flakes or sriracha for heat
Instructions
- Prepare the vegetables: Slice all vegetables thinly to make rolling easier. Arrange the vegetables, herbs, and optional fillings like rice noodles or tofu in separate bowls.
- Make the dipping sauce: In a small bowl, whisk together the peanut butter, soy sauce, hoisin sauce, rice vinegar, and warm water until smooth. Adjust consistency with more water if necessary, and add chili flakes or sriracha for spice.
- Set up rolling station: Fill a large shallow dish with warm water. Dip a rice paper wrapper into the water for about 5–10 seconds, until it’s soft but not too floppy. Place the softened wrapper on a clean surface, like a cutting board.
