Ingredients

  • 1 pre-made pie crust (store-bought or homemade)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 zucchini, diced
  • 1 cup spinach, roughly chopped
  • 1/2 cup peas (fresh or frozen)
  • 1/2 cup cream or milk
  • 1/2 cup shredded cheddar or mozzarella cheese
  • 2 tbsp flour
  • 1 tsp thyme (optional)
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C).
  2. Sauté the vegetables: Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, and carrot, sautéing for 5-7 minutes until softened. Stir in the zucchini, spinach, and peas, and cook for another 3-4 minutes until the vegetables are tender.
  3. Make the sauce: Sprinkle the flour over the vegetables and stir to combine. Gradually pour in the cream or milk, stirring until the mixture thickens. Add the shredded cheese, thyme (if using), and season with salt and pepper to taste.
  4. Assemble the pie: Roll out the pie crust and fit it into a greased pie dish. Pour the vegetable filling into the crust, spreading it evenly.
  5. Top with crust: If you’re using a second crust for the top, roll it out and place it over the pie. Crimp the edges to seal and cut a few slits on top to allow steam to escape. Brush the top with beaten egg for a golden finish.
  6. Bake: Place the pie in the oven and bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
  7. Cool and serve: Allow the pie to cool for 10 minutes before slicing and serving.

This Vegetable Pie is a warm, comforting dish with a perfect balance of tender vegetables and creamy richness, making it a delightful way to enjoy a variety of veggies in one satisfying meal.
