Ingredients

  • 2 tbsp vegetable oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2-3 tbsp green curry paste (adjust to taste)
  • 1 can (14 oz) coconut milk
  • 1 cup vegetable broth
  • 1 small zucchini, sliced
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 large carrot, thinly sliced
  • 1/2 cup snap peas or green beans
  • 1 tbsp soy sauce or tamari
  • 1 tbsp lime juice
  • Fresh cilantro or Thai basil for garnish
  • Cooked jasmine rice or rice noodles, for serving
  • Lime wedges, for serving

Instructions

  1. Sauté the aromatics: In a large skillet or wok, heat the vegetable oil over medium heat. Add the diced onion and sauté for 4-5 minutes until softened. Stir in the garlic and ginger, cooking for another minute until fragrant.
  2. Add the curry paste: Stir in the green curry paste and cook for 1-2 minutes, allowing the flavors to deepen.
  3. Simmer the sauce: Add the coconut milk and vegetable broth, stirring to combine. Bring the mixture to a simmer.
  4. Cook the vegetables: Add the zucchini, bell pepper, broccoli, carrots, and snap peas to the curry. Stir to coat the vegetables in the sauce. Simmer for 10-12 minutes, or until the vegetables are tender but still crisp.
  5. Season the curry: Stir in the soy sauce (or tamari) and lime juice. Taste and adjust seasoning, adding more curry paste or salt if desired.
  6. Serve: Ladle the vegetable green curry over cooked jasmine rice or rice noodles. Garnish with fresh cilantro or Thai basil and serve with lime wedges on the side.
