VEAL MARSALA

Veal Marsala is a classic Italian-American dish featuring tender veal cutlets simmered in a rich, flavorful sauce made with Marsala wine, mushrooms, and butter. Ingredients:

  • 4 veal cutlets, pounded thin

  • 3 tablespoons unsalted butter, divided
  • 8 oz mushrooms, sliced
  • 1/2 cup Marsala wine
  • 1/2 cup chicken or beef broth
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Season and dredge the veal: Season the veal cutlets with salt and pepper. Dredge each cutlet in flour, shaking off any excess.
  2. Cook the veal: In a large skillet, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium heat. Add the veal cutlets and cook for about 2-3 minutes per side, or until golden brown. Remove the veal from the skillet and set aside.
  3. Cook the mushrooms: In the same skillet, add the remaining olive oil and 1 tablespoon of butter. Sauté the mushrooms for 4-5 minutes until they are golden brown. Add the garlic and thyme (if using) and cook for another minute until fragrant.
  4. Make the Marsala sauce: Pour in the Marsala wine and chicken or beef broth, stirring to deglaze the pan and scrape up any browned bits from the bottom. Bring the mixture to a simmer and cook for 5-7 minutes, until the sauce reduces slightly and thickens.
  5. Finish the dish: Return the veal cutlets to the skillet, spooning the sauce and mushrooms over the top. Let the veal simmer in the sauce for an additional 2-3 minutes, allowing the flavors to meld. Stir in the remaining tablespoon of butter for a silky finish.
  6. Serve: Garnish the Veal Marsala with fresh parsley and serve hot with your choice of pasta, mashed potatoes, or sautéed greens.
