Ingredients:

  • 2 lbs baby potatoes, halved
  • 1 cup Greek yogurt
  • 1 small cucumber, grated and excess water squeezed out
  • 2 cloves garlic, minced
  • 2 tbsp fresh dill, chopped
  • 1 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Salt and pepper, to taste
  • ½ red onion, thinly sliced
  • ½ cup cherry tomatoes, halved
  • ½ cup Kalamata olives, pitted and halved (optional)
  • Fresh dill or parsley, for garnish

Instructions:

  1. Cook the Potatoes: Place the halved baby potatoes in a large pot and cover them with cold water. Add a generous pinch of salt and bring to a boil over medium-high heat. Cook the potatoes for about 10-15 minutes, or until they are tender when pierced with a fork. Drain and let them cool slightly.
  2. Prepare the Tzatziki Sauce: While the potatoes are cooking, prepare the tzatziki sauce. In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, olive oil, and red wine vinegar. Mix well to combine. Season with salt and pepper to taste. Let the sauce sit for a few minutes to allow the flavors to meld together.
  3. Combine the Salad: In a large mixing bowl, combine the cooked and slightly cooled potatoes with the thinly sliced red onion, cherry tomatoes, and Kalamata olives (if using). Pour the prepared tzatziki sauce over the potato mixture and gently toss to coat all the ingredients evenly.
  4. Chill and Serve: Cover the bowl and refrigerate the potato salad for at least 30 minutes to allow the flavors to blend. Before serving, taste and adjust the seasoning if necessary. Garnish with additional fresh dill or parsley, if desired.
  5. Enjoy: Serve chilled and enjoy this refreshing Tzatziki Potato Salad as a side dish to your favorite grilled meats or as a light and flavorful standalone dish!

This easy and healthy recipe will add a Mediterranean flair to your meal and is sure to be a crowd-pleaser!
