Ingredients:

  • For the Filling:
    • 1 lb ground turkey
    • 1 tablespoon olive oil
    • 1 onion, finely chopped
    • 2 cloves garlic, minced
    • 2 carrots, diced
    • 1 cup frozen peas
    • 1 cup corn kernels (fresh or frozen)
    • 2 tablespoons tomato paste
    • 1 tablespoon Worcestershire sauce
    • 1 cup chicken or turkey broth
    • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional for thickening)
    • Salt and pepper to taste
    • Fresh thyme or parsley (optional for garnish)
  • For the Mashed Potato Topping:
    • 4 large potatoes, peeled and cubed
    • 4 tablespoons butter
    • 1/2 cup milk or cream
    • Salt and pepper to taste
    • 1/2 cup shredded cheddar cheese (optional)

Instructions:

  1. Prepare the Mashed Potatoes:
    • Place the cubed potatoes in a large pot of salted water and bring to a boil. Cook until the potatoes are tender, about 15 minutes.
    • Drain the potatoes and return them to the pot. Add the butter and milk (or cream), then mash until smooth. Season with salt and pepper to taste. Set aside.
  2. Cook the Turkey Filling:
    • Preheat your oven to 400°F (200°C).
    • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
    • Add the minced garlic and diced carrots, cooking for another 3-4 minutes until the carrots begin to soften.
    • Stir in the ground turkey and cook until browned, breaking it up with a spoon as it cooks.
  3. Add the Vegetables and Sauce:
    • Stir in the tomato paste and Worcestershire sauce, mixing well to coat the turkey and vegetables.
    • Pour in the chicken or turkey broth and bring to a simmer. Cook for about 5 minutes, allowing the flavors to meld together.
    • If the mixture is too thin, stir in the cornstarch slurry and cook until the sauce thickens.
    • Add the frozen peas and corn, stirring until they are heated through. Season with salt and pepper to taste.
  4. Assemble the Shepherd’s Pie:
    • Transfer the turkey mixture to a large baking dish, spreading it out evenly.
    • Spoon the mashed potatoes over the turkey filling, spreading them out to cover the entire surface. Use a fork to create a textured pattern on top, if desired.
    • If using, sprinkle the shredded cheddar cheese over the mashed potatoes.
  5. Bake:
    • Place the dish in the preheated oven and bake for 20-25 minutes, or until the top is golden and the filling is bubbling around the edges.
  6. Serve:
    • Let the Shepherd’s Pie cool slightly before serving. Garnish with fresh thyme or parsley, if desired.

Enjoy your Turkey Shepherd’s Pie, a comforting and flavorful dish that’s perfect for any occasion!
