Turkey Lasagna

Ingredients:

  • 1 lb ground turkey
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 24 oz marinara sauce
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tbsp Italian seasoning
  • Salt and pepper, to taste
  • 9 lasagna noodles
  • 15 oz ricotta cheese
  • 1 egg
  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet, cook the ground turkey over medium heat until browned. Add the chopped onion and garlic, and sauté until the onion is translucent.
  3. Stir in the marinara sauce, diced tomatoes, Italian seasoning, salt, and pepper. Let the sauce simmer for about 10 minutes, allowing the flavors to meld together.
  4. While the sauce simmers, cook the lasagna noodles according to package instructions. Drain and set aside.
  5. In a medium bowl, mix the ricotta cheese with the egg, 1 cup of mozzarella cheese, and the Parmesan cheese. Stir until well combined.
  6. To assemble the lasagna, spread a thin layer of the turkey sauce on the bottom of the prepared baking dish. Lay three lasagna noodles on top, followed by a layer of the ricotta mixture, then more turkey sauce. Repeat the layers two more times, finishing with a final layer of sauce.
  7. Sprinkle the remaining 1 cup of mozzarella cheese over the top.
  8. Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden brown.
  9. Remove from the oven and let the lasagna sit for about 10 minutes before slicing. Garnish with fresh parsley, if desired, and serve hot. Enjoy!
