Ingredients:
- 1 lb ground turkey
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 24 oz marinara sauce
- 1 can (14.5 oz) diced tomatoes, drained
- 1 tbsp Italian seasoning
- Salt and pepper, to taste
- 9 lasagna noodles
- 15 oz ricotta cheese
- 1 egg
- 2 cups shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped (optional)
Instructions:
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large skillet, cook the ground turkey over medium heat until browned. Add the chopped onion and garlic, and sauté until the onion is translucent.
- Stir in the marinara sauce, diced tomatoes, Italian seasoning, salt, and pepper. Let the sauce simmer for about 10 minutes, allowing the flavors to meld together.
- While the sauce simmers, cook the lasagna noodles according to package instructions. Drain and set aside.
- In a medium bowl, mix the ricotta cheese with the egg, 1 cup of mozzarella cheese, and the Parmesan cheese. Stir until well combined.
- To assemble the lasagna, spread a thin layer of the turkey sauce on the bottom of the prepared baking dish. Lay three lasagna noodles on top, followed by a layer of the ricotta mixture, then more turkey sauce. Repeat the layers two more times, finishing with a final layer of sauce.
- Sprinkle the remaining 1 cup of mozzarella cheese over the top.
- Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden brown.
- Remove from the oven and let the lasagna sit for about 10 minutes before slicing. Garnish with fresh parsley, if desired, and serve hot. Enjoy!
