Turkey Gumbo

Ingredients:

  • 1 lb cooked turkey, shredded

  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 cup sliced okra (fresh or frozen)
  • 4 cups chicken or turkey broth
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 1 tsp filé powder (optional, for thickening)
  • Cooked rice, for serving
  • Hot sauce, for serving (optional)

Instructions:

  1. Make the roux: In a large pot or Dutch oven, heat the vegetable oil over medium heat. Slowly whisk in the flour, stirring constantly to avoid burning. Cook the roux, stirring frequently, until it reaches a deep brown color, about 10–15 minutes.
  2. Add the vegetables: Once the roux is ready, add the diced onion, bell pepper, celery, and garlic. Sauté the vegetables in the roux until they are soft and fragrant, about 5 minutes.
  3. Add the broth and seasonings: Stir in the diced tomatoes, okra, chicken or turkey broth, smoked paprika, cayenne pepper (if using), thyme, and bay leaves. Bring the mixture to a simmer and cook for 20–25 minutes, allowing the flavors to meld.
  4. Add the turkey: Stir in the shredded turkey and cook for another 10 minutes until the turkey is heated through. Season with salt and pepper to taste.
  5. Finish the gumbo: If using, sprinkle in the filé powder to thicken the gumbo. Stir in the chopped parsley.
  6. Serve: Remove the bay leaves, and serve the gumbo over cooked rice. Add hot sauce if desired.
