Turkey Fried Rice

  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 cup frozen peas and carrots
  • 2 eggs, lightly beaten
  • 3 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp sesame oil
  • 3 green onions, sliced
  • Salt and pepper, to taste

Instructions:

  1. Heat the oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the diced onion and garlic, and sauté for 2-3 minutes until softened and fragrant.
  2. Cook the vegetables and turkey: Add the frozen peas and carrots to the skillet and cook for 3-4 minutes, until tender. Stir in the cooked turkey and cook for another 2 minutes to warm through.
  3. Scramble the eggs: Push the turkey and vegetables to one side of the skillet. Add the remaining tablespoon of oil to the empty side and pour in the beaten eggs. Scramble the eggs until fully cooked, then mix them into the turkey and vegetables.
  4. Add the rice: Add the cooked, cooled rice to the skillet. Stir everything together, breaking up any clumps of rice.
  5. Season and finish: Pour the soy sauce and sesame oil over the rice mixture, stirring well to combine. Season with salt and pepper to taste. Cook for 2-3 more minutes, allowing the rice to crisp slightly. Stir in the sliced green onions just before serving.
