TURKEY FRIED RICE

Turkey Fried Rice is a quick, flavorful dish that’s perfect for using up leftover turkey, especially after a holiday feast. This easy recipe takes inspiration from classic fried rice, blending savory turkey with vegetables, fluffy rice, and a hint of soy sauce for a delicious meal that comes together in minutes. With a touch of garlic and ginger for added depth, this dish is a great way to repurpose leftovers into a satisfying and wholesome meal. Ingredients:

  • 2 tablespoons vegetable oil
  • 2 cups cooked turkey, diced or shredded
  • 3 cups cooked and cooled rice (preferably day-old)
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, minced
  • 1 cup frozen peas and carrots (or other mixed vegetables)
  • 3 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • 2 eggs, lightly beaten
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions:

  1. Heat the oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the diced onion and sauté for 2-3 minutes until softened. Add the garlic and ginger, and cook for another 1 minute until fragrant.
  2. Cook the turkey: Add the cooked turkey to the skillet, stirring to combine with the onions and garlic. Cook for 2-3 minutes until the turkey is heated through.
  3. Add the vegetables: Stir in the frozen peas and carrots (or other vegetables), and cook for another 2-3 minutes until they are tender.
  4. Cook the rice: Push the mixture to one side of the skillet and add the remaining tablespoon of oil. Add the rice, breaking up any clumps, and stir-fry for 4-5 minutes until heated through and slightly crispy.
  5. Scramble the eggs: Push the rice to the sides of the skillet to create a well in the center. Pour in the beaten eggs and scramble them, stirring constantly until they are fully cooked. Once done, mix the eggs into the rice.
  6. Season and serve: Stir in the soy sauce and sesame oil, mixing everything together. Season with salt and pepper to taste. Garnish with chopped green onions before serving.
