Ingredients:

  • 2 cups cooked turkey, shredded
  • 1 cup sour cream
  • 1 cup green enchilada sauce
  • 1 can (4 oz) diced green chilies
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 8 small flour or corn tortillas
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper, to taste
  • Chopped fresh cilantro, for garnish
  • Sliced jalapeños, for garnish (optional)

Instructions:

  1. Prepare the Creamy Sauce: In a medium bowl, mix together the sour cream, green enchilada sauce, and diced green chilies until well combined. Set aside.
  2. Cook the Filling: In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 4-5 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant. Stir in the shredded turkey, ground cumin, chili powder, salt, and pepper. Cook for 2-3 minutes until the turkey is heated through. Remove from heat.
  3. Assemble the Enchiladas: Preheat your oven to 375°F (190°C). Spread a small amount of the creamy sauce in the bottom of a 9×13-inch baking dish. Fill each tortilla with about 1/4 cup of the turkey mixture, roll them up, and place seam side down in the baking dish.
  4. Top with Sauce and Cheese: Pour the remaining creamy sauce over the enchiladas, making sure they are evenly coated. Sprinkle the shredded Monterey Jack and cheddar cheese over the top.
  5. Bake: Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  6. Serve: Garnish with chopped cilantro and sliced jalapeños, if desired. Serve hot with your favorite sides.

Enjoy these creamy and comforting Turkey Enchiladas as a delightful main dish for any occasion!
