Ingredients:

For the poke:

  • 1/2 lb sushi-grade tuna, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon rice vinegar
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon sriracha (optional, for heat)
  • 1 tablespoon green onions, chopped
  • 1 teaspoon sesame seeds

For the bowl:

  • 2 cups cooked sushi rice or jasmine rice
  • 1/2 cucumber, thinly sliced
  • 1 small avocado, diced
  • 1/2 cup shredded carrots
  • 1/4 cup edamame, cooked
  • 1/4 cup radishes, thinly sliced
  • 1 tablespoon pickled ginger (optional)

For garnish:

  • 1 tablespoon sesame seeds
  • 1 tablespoon chopped green onions
  • Soy sauce or sriracha mayo (optional, for drizzling)

Instructions:

  1. Marinate the tuna:
    • In a medium bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey (or maple syrup), and sriracha (if using). Add the diced tuna, green onions, and sesame seeds. Toss to coat the tuna evenly in the marinade. Cover and refrigerate for 10-15 minutes to allow the flavors to meld.
  2. Prepare the rice and toppings:
    • While the tuna marinates, cook the sushi or jasmine rice according to package instructions and set aside. Prepare the toppings by slicing the cucumber, dicing the avocado, shredding the carrots, and cooking the edamame.
  3. Assemble the poke bowl:
    • Divide the cooked rice between two bowls. Arrange the cucumber, avocado, shredded carrots, edamame, radishes, and pickled ginger around the bowl.
  4. Add the tuna:
    • Spoon the marinated tuna over the rice in the center of each bowl.
