Ingredients

For the Cake:

  • 2 cups (250g) all-purpose flour
  • 1 ¾ cups (350g) granulated sugar
  • ¾ cup (75g) unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 1 cup (240ml) buttermilk
  • ½ cup (120ml) vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup (240ml) hot coffee (or hot water)

For the Chocolate Ganache:

  • 8 oz (225g) dark chocolate, finely chopped
  • 1 cup (240ml) heavy cream

For the Chocolate Frosting:

  • 1 cup (225g) unsalted butter, softened
  • 3 cups (360g) powdered sugar
  • ½ cup (50g) unsweetened cocoa powder
  • 2–3 tbsp (30–45ml) milk or cream
  • 1 tsp vanilla extract

For Decoration:

  • Shaved white chocolate, milk chocolate, and dark chocolate
  • Optional: chocolate curls or sprinkles

Instructions

  1. Make the Cake:
    • Preheat the oven to 350°F (175°C). Grease and flour three 8-inch (20cm) round cake pans or line with parchment paper.
    • In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
    • Add the buttermilk, oil, eggs, and vanilla. Mix until combined. Slowly stir in the hot coffee or water until the batter is smooth.
    • Divide the batter evenly among the prepared pans. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cakes to cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
  2. Prepare the Ganache:
    • Place the chopped dark chocolate in a heatproof bowl.
    • Heat the cream in a small saucepan over medium heat until it begins to simmer. Pour the hot cream over the chocolate and let it sit for 2 minutes.
    • Stir until smooth and glossy. Let cool slightly until spreadable.
  3. Make the Frosting:
    • Beat the butter with an electric mixer until creamy. Gradually add the powdered sugar and cocoa powder, beating until fluffy.
    • Add the milk, one tablespoon at a time, until the frosting reaches your desired consistency. Mix in the vanilla extract.
  4. Assemble the Cake:
    • Place one cake layer on a serving plate. Spread a layer of chocolate ganache on top. Repeat with the second layer, adding more ganache.
    • Top with the final cake layer. Frost the entire cake with the chocolate frosting.
  5. Decorate:
    • Sprinkle the top and sides with shaved white, milk, and dark chocolate. Add chocolate curls or sprinkles if desired.
