This vegan-friendly recipe is easy to make and can be enjoyed with crusty bread or a side salad for a complete meal. It’s a satisfying and delicious way to warm up on cooler days.

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 (15 oz) cans of white beans (cannellini or great northern), drained and rinsed
  • 1 (28 oz) can crushed tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil (or 1 tablespoon fresh basil, chopped)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • Fresh parsley or basil for garnish

Instructions:

  1. Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  2. Add the tomatoes and broth: Stir in the crushed tomatoes, vegetable broth, basil, oregano, smoked paprika, salt, and pepper. Bring the mixture to a simmer and let it cook for 10 minutes to allow the flavors to meld together.
  3. Add the beans: Stir in the white beans and red pepper flakes (if using). Continue simmering for another 10 minutes, stirring occasionally.
  4. Blend if desired: For a smoother texture, use an immersion blender to puree part of the soup, or transfer a portion of it to a blender, and blend until smooth. Return it to the pot and stir to combine.
  5. Adjust seasoning: Taste the soup and adjust the seasoning with more salt, pepper, or herbs as needed.
  6. Serve: Ladle the soup into bowls and garnish with fresh parsley or basil. Serve with crusty bread or your favorite side.
