Tomato Pie

Tomato Pie is a delightful Southern dish that perfectly balances the sweetness of ripe tomatoes with the creaminess of a rich, cheesy filling, all nestled in a buttery, flaky pie crust. This savory pie is a wonderful way to use up an abundance of fresh tomatoes, making it an ideal dish during the summer months when tomatoes are at their peak. The combination of tangy tomatoes, fresh basil, and a blend of cheeses creates a comforting and flavorful meal that can be served as a main course with a side salad or as a hearty side dish at any gathering.

Ingredients:

  • 1 pre-baked 9-inch pie crust
  • 4 large ripe tomatoes, sliced
  • 1 teaspoon salt
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 2 tablespoons all-purpose flour
  • 2 tablespoons breadcrumbs (optional, for topping)
  • Fresh basil leaves for garnish (optional)

Instructions:

  1. Prepare the Tomatoes: Place the tomato slices in a single layer on paper towels. Sprinkle with 1 teaspoon of salt and let them sit for about 30 minutes to draw out excess moisture. Pat the tomatoes dry with additional paper towels.
  2. Preheat the Oven: Preheat your oven to 350°F (175°C).
  3. Assemble the Filling: In a medium bowl, combine the mayonnaise, sour cream, cheddar cheese, mozzarella cheese, Parmesan cheese, chopped basil, black pepper, garlic powder, onion powder, and flour. Mix until well combined.
  4. Layer the Pie: Place a layer of tomatoes in the bottom of the pre-baked pie crust. Spread about half of the cheese mixture over the tomatoes. Repeat with another layer of tomatoes and the remaining cheese mixture.
  5. Add Topping (Optional): If using breadcrumbs, sprinkle them over the top of the pie for a crunchy finish.
  6. Bake the Pie: Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and bubbly.
  7. Cool and Serve: Allow the pie to cool slightly before slicing. Garnish with fresh basil leaves if desired, and serve warm or at room temperature.

Enjoy this Tomato Pie as a comforting dish that’s bursting with fresh flavors, making it a favorite for family meals and summer gatherings alike!
