Ingredients:

  • 3-4 lb pork shoulder or pork butt, trimmed of excess fat
  • 1 ½ lbs fresh tomatillos, husked and rinsed

  • 4 garlic cloves, minced
  • 2-3 jalapeños, seeded and chopped (adjust for heat)
  • 1 cup chicken broth
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions:

  1. Prepare the Tomatillo Sauce:
    • Preheat your oven to 400°F (200°C).
    • Place the tomatillos on a baking sheet and roast for about 15-20 minutes, or until they are soft and slightly charred.
    • Allow the tomatillos to cool slightly, then transfer them to a blender along with the chopped onion, garlic, jalapeños, cumin, oregano, and chicken broth. Blend until smooth.
  2. Sear the Pork:
