For the Sauce:
- 3 tbsp tamarind paste (or 2 tbsp lime juice as a substitute)
- 2 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tbsp rice vinegar
- 1 tbsp chili paste or sriracha (adjust to taste)
Instructions:
- Cook the Noodles: Prepare the rice noodles according to package instructions. Drain, rinse with cold water, and set aside.
- Make the Sauce: In a small bowl, whisk together the tamarind paste, soy sauce, brown sugar, rice vinegar, and chili paste until smooth. Set aside.
- Cook the Tofu: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the cubed tofu and cook until golden and crispy on all sides, about 5-7 minutes. Remove from the pan and set aside.
