Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 1 bell pepper, diced (any color)
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) pinto beans, drained and rinsed
  • 1 can (28 ounces) diced tomatoes (with juice)
  • 1 can (15 ounces) tomato sauce
  • 1 cup vegetable broth
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, avocado, diced green onions

Instructions

  1. Sauté Vegetables: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and bell pepper, sautéing for about 5 minutes or until softened. Add the minced garlic and cook for an additional minute until fragrant.
  2. Add the Spices: Sprinkle in the chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir well to coat the vegetables with the spices and cook for another 1-2 minutes to bring out the flavors.
  3. Combine Beans and Tomatoes: Add the black beans, kidney beans, pinto beans, diced tomatoes (with juice), tomato sauce, and vegetable broth to the pot. Stir everything together until fully combined.
  4. Simmer the Chili: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 25-30 minutes, stirring occasionally, until the flavors have melded and the chili has thickened to your desired consistency.
  5. Adjust Seasoning: Taste the chili and adjust seasoning with additional salt, pepper, or spices as desired.
  6. Serve: Ladle the Three Bean Chili into bowls and top with your favorite garnishes, such as shredded cheese, a dollop of sour cream, chopped cilantro, avocado slices, or green onions.

Three Bean Chili is a warm, comforting meal that’s easy to make and packed with plant-based protein. This versatile chili can be customized with different toppings, making it a wholesome and delicious dish to enjoy any time of year!
