Ingredients:

For the crust:

  • 1 pre-made pizza crust (or homemade, if preferred)
  • 2 tablespoons olive oil (for brushing)

For the peanut sauce:

  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon sriracha (optional, for spice)
  • 2 tablespoons water (to thin, if necessary)

Toppings:

  • 1 cup cooked chicken, shredded or diced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded carrots
  • 1/2 cup thinly sliced red bell peppers
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons chopped peanuts (optional, for garnish)
  • Lime wedges (for serving)

Instructions:

  1. Preheat oven to 425°F (220°C). If using a pizza stone, place it in the oven to heat.
  2. Prepare the peanut sauce: In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, honey, and sriracha. Add water, a tablespoon at a time, until the sauce reaches a smooth, spreadable consistency.
  3. Assemble the pizza: Place the pizza crust on a baking sheet or a pizza peel (if using a pizza stone). Brush the crust lightly with olive oil. Spread the peanut sauce evenly over the crust, leaving a 1-inch border around the edges.
  4. Add toppings: Sprinkle half of the mozzarella cheese over the sauce. Distribute the chicken, carrots, and red bell peppers evenly across the pizza. Top with the remaining mozzarella.
  5. Bake the pizza: Transfer the pizza to the oven (or onto the pizza stone) and bake for 12–15 minutes, or until the crust is golden and the cheese is melted and bubbly.
  6. Garnish and serve: Remove the pizza from the oven and sprinkle with green onions, cilantro, and chopped peanuts. Slice and serve with lime wedges on the side for a fresh, zesty kick.

Enjoy this creative take on pizza night with the bold and refreshing flavors of Thai cuisine!
