Ingredients

For the Chicken:

  • 1 cup shredded carrots
  • 1 cup thinly sliced red bell peppers
  • ½ cup cucumber slices or julienned cucumbers
  • ¼ cup chopped peanuts
  • Fresh cilantro leaves (for garnish)

For the Peanut Sauce:

  • ¼ cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon sesame oil
  • 1–2 tablespoons water (to thin the sauce as needed)

Instructions

  1. Prepare the Chicken:
    • In a medium bowl, whisk together soy sauce, fish sauce, lime juice, peanut butter, sesame oil, garlic, ginger, and sriracha.
    • Add the chicken to the marinade, ensuring it’s well coated. Let it marinate for at least 20 minutes or up to 2 hours in the refrigerator.

    • In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey, sesame oil, and water until smooth. Adjust the consistency with additional water if needed.
  3. Assemble the Wraps:
    • Lay out the lettuce leaves or tortillas. Layer each with chicken slices, shredded carrots, red bell peppers, and cucumber.
    • Drizzle with peanut sauce, sprinkle with chopped peanuts, and garnish with cilantro leaves.
  4. Serve:
    • Roll up the wraps tightly and secure with toothpicks if necessary. Serve immediately with extra peanut sauce on the side for dipping.
