This dish is perfect for a summer barbecue or as an appetizer for a Thai-themed dinner party, offering a delightful combination of textures and flavors that will transport your taste buds to Southeast Asia.

Ingredients

For the Chicken Marinade:

  • 1 pound (450g) chicken breast or thighs, cut into thin strips
  • 1/2 cup coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil

For the Peanut Sauce:

  • 1/2 cup creamy peanut butter
  • 1/2 cup coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 1 teaspoon red curry paste
  • 1 clove garlic, minced
  • Water, as needed to adjust consistency

To Serve:

  • Fresh cucumber slices
  • Fresh cilantro leaves
  • Lime wedges

Instructions

  1. Marinate the Chicken:
    • In a large bowl, combine coconut milk, soy sauce, fish sauce, brown sugar, curry powder, turmeric, coriander, minced garlic, and vegetable oil.
    • Add the chicken strips to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  2. Prepare the Peanut Sauce:
    • In a small saucepan over low heat, combine peanut butter, coconut milk, soy sauce, fish sauce, lime juice, brown sugar, red curry paste, and minced garlic.
    • Stir until smooth and heated through. If the sauce is too thick, add water a tablespoon at a time to reach the desired consistency. Remove from heat and set aside.
  3. Grill the Chicken:
    • Preheat a grill or grill pan over medium-high heat. Thread the marinated chicken strips onto skewers.
    • Grill the chicken skewers for 3-4 minutes on each side, or until fully cooked and slightly charred.
  4. Serve:
    • Arrange the chicken satay on a platter and serve with peanut sauce on the side.
    • Garnish with fresh cucumber slices, cilantro leaves, and lime wedges for added freshness.
