Ingredients:

For the crust:

  • 1 cup all-purpose flour
  • 1/2 cup butter, melted
  • 1/2 cup chopped pecans

For the filling:

  • 1 cup powdered sugar
  • 8 oz cream cheese, softened
  • 1 container (8 oz) whipped topping (like Cool Whip), divided

For the pudding layer:

  • 2 packages (3.4 oz each) instant vanilla or chocolate pudding mix
  • 3 cups milk

Instructions:

  1. Make the crust: Preheat your oven to 350°F (175°C). In a bowl, mix together the flour, melted butter, and chopped pecans. Press the mixture into the bottom of a 9×13-inch baking dish. Bake for 15 minutes or until golden brown. Let it cool completely.
  2. Prepare the cream cheese layer: In a medium bowl, beat the softened cream cheese and powdered sugar until smooth. Fold in half of the whipped topping and spread this mixture over the cooled crust.
  3. Make the pudding layer: In another bowl, whisk together the instant pudding mix and milk until thickened. Pour this over the cream cheese layer.
  4. Top and chill: Spread the remaining whipped topping over the pudding layer, smoothing it out. Refrigerate for at least 4 hours or overnight to allow the layers to set.
  5. Serve and enjoy! Optionally, sprinkle extra chopped pecans on top for added crunch.
