Texas Deer Chili

  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (optional)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 1 cup beef broth
  • 1 cup water
  • 1 tbsp Worcestershire sauce
  • Salt and pepper, to taste
  • Shredded cheese, sour cream, and sliced green onions, for garnish (optional)

Instructions:

  1. Brown the venison: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the cubed venison and brown on all sides, about 5-7 minutes. Remove the meat and set aside.
  2. Sauté the vegetables: In the same pot, add the diced onion, garlic, and jalapeños. Sauté until the vegetables are softened, about 3-4 minutes.
  3. Add the spices: Stir in the chili powder, cumin, paprika, and cayenne pepper (if using). Cook for another minute, allowing the spices to become fragrant.
  4. Simmer the chili: Add the browned venison back to the pot along with the diced tomatoes, tomato paste, beef broth, water, and Worcestershire sauce. Stir to combine.
