Texas Caviar, also known as Cowboy Caviar, is a vibrant and refreshing dip or salad that embodies the flavors of the American Southwest. This dish is a delightful medley of black-eyed peas, colorful bell peppers, corn, and onions, all tossed in a tangy and slightly sweet vinaigrette. Ingredients:

  • 2 cans (15 ounces each) black-eyed peas, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn kernels, drained
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small red onion, finely chopped
  • 2 jalapeños, seeded and finely chopped (optional)
  • 1/2 cup chopped cilantro
  • 3/4 cup Italian dressing (store-bought or homemade)
  • 2 tablespoons lime juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

  1. Prepare the Vegetables: In a large bowl, combine the black-eyed peas, black beans, corn, red bell pepper, green bell pepper, yellow bell pepper, red onion, and jalapeños.
  2. Make the Dressing: In a small bowl, whisk together the Italian dressing, lime juice, garlic powder, salt, and pepper until well combined.
  3. Toss the Salad: Pour the dressing over the vegetable and bean mixture. Add the chopped cilantro and gently toss everything together until all the ingredients are evenly coated with the dressing.
