Ingredients:

  • 8 oz pasta (penne, rotini, or your choice)
  • 1 lb ground beef or ground turkey
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper (red, green, or yellow), diced
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 cup tomato sauce
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon crushed red pepper flakes (optional, for heat)
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sour cream (optional)
  • 1 tablespoon olive oil

Instructions:

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Cook the Meat: In a large skillet or pot, heat olive oil over medium heat. Add the ground beef (or turkey) and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  3. Add Vegetables and Spices: Add the diced onion and bell pepper to the skillet with the meat. Cook for about 5 minutes until the vegetables are softened. Add garlic and cook for another 1-2 minutes until fragrant. Stir in chili powder, cumin, smoked paprika, and crushed red pepper flakes. Cook for another minute, allowing the spices to bloom.
  4. Mix in the Beans and Corn: Add the black beans, corn, diced tomatoes (with juice), and tomato sauce to the skillet. Stir well to combine and bring to a simmer. Reduce the heat and let it cook for 5-7 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.
  5. Combine with Pasta: Add the cooked pasta to the skillet and toss well to combine with the sauce and vegetables. Let it cook for another 2-3 minutes to heat through.
  6. Add Cheese: Sprinkle shredded cheddar cheese over the top of the pasta. Cover the skillet and let it cook on low for 2-3 minutes, or until the cheese is melted and bubbly.
  7. Garnish and Serve: Remove from heat, garnish with fresh cilantro, and serve hot. Optionally, top with a dollop of sour cream for added creaminess.
