Ingredients:
- 8 oz pasta (penne, rotini, or your choice)
- 1 lb ground beef or ground turkey
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper (red, green, or yellow), diced
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1/2 cup tomato sauce
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon crushed red pepper flakes (optional, for heat)
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- 1/2 cup sour cream (optional)
- 1 tablespoon olive oil
Instructions:
- Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and set aside.
- Cook the Meat: In a large skillet or pot, heat olive oil over medium heat. Add the ground beef (or turkey) and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
- Add Vegetables and Spices: Add the diced onion and bell pepper to the skillet with the meat. Cook for about 5 minutes until the vegetables are softened. Add garlic and cook for another 1-2 minutes until fragrant. Stir in chili powder, cumin, smoked paprika, and crushed red pepper flakes. Cook for another minute, allowing the spices to bloom.
- Mix in the Beans and Corn: Add the black beans, corn, diced tomatoes (with juice), and tomato sauce to the skillet. Stir well to combine and bring to a simmer. Reduce the heat and let it cook for 5-7 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.
- Combine with Pasta: Add the cooked pasta to the skillet and toss well to combine with the sauce and vegetables. Let it cook for another 2-3 minutes to heat through.
- Add Cheese: Sprinkle shredded cheddar cheese over the top of the pasta. Cover the skillet and let it cook on low for 2-3 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve: Remove from heat, garnish with fresh cilantro, and serve hot. Optionally, top with a dollop of sour cream for added creaminess.
