Teriyaki Sauce

Ingredients:

  • 1/2 cup soy sauce
  • 1/4 cup mirin (Japanese sweet rice wine) or dry sherry
  • 1/4 cup sake (or water)
  • 2 tbsp brown sugar (adjust to taste)
  • 1 tbsp honey (optional for extra sweetness)
  • 1 tsp fresh ginger, grated
  • 1 garlic clove, minced
  • 1 tbsp cornstarch (optional for thickening)
  • 2 tbsp water (for slurry, if using cornstarch)

Instructions:

  1. In a small saucepan, combine the soy sauce, mirin, sake (or water), brown sugar, honey (if using), ginger, and garlic. Stir well to combine.
  2. Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally until the sugar is fully dissolved.
  3. For a thicker sauce: In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Gradually stir this slurry into the simmering sauce and continue cooking for another 2-3 minutes until the sauce thickens to your desired consistency.
  4. Once the sauce has thickened and the flavors have melded, remove from heat. Taste and adjust the sweetness or saltiness to your preference.
  5. Allow the sauce to cool slightly before using it as a glaze, marinade, or dipping sauce.
