Tequila Lime Chicken

Tequila Lime Chicken is a vibrant and flavorful dish that captures the essence of summer. The chicken is marinated in a zesty combination of tequila, fresh lime juice, garlic, and spices, giving it a tangy, citrusy kick with a hint of smokiness. Grilled to perfection, this dish is perfect for outdoor barbecues, casual dinners, or even tacos and salads. The tequila not only adds depth to the flavor but helps tenderize the chicken, making it juicy and delicious.

Tequila Lime Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup tequila
  • 1/4 cup fresh lime juice (about 2-3 limes)
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional for extra heat)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions:

  1. Make the marinade: In a medium bowl, whisk together the tequila, lime juice, olive oil, garlic, chili powder, cumin, paprika, cayenne pepper (if using), salt, and pepper.
  2. Marinate the chicken: Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, making sure it’s evenly coated. Seal the bag or cover the dish, and refrigerate for at least 2 hours, or up to 8 hours for maximum flavor.
  3. Preheat the grill: Heat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
  4. Grill the chicken: Remove the chicken from the marinade, letting any excess drip off. Grill the chicken for 6-7 minutes per side, or until it reaches an internal temperature of 165°F (75°C) and is nicely charred on the outside.
  5. Rest and serve: Remove the chicken from the grill and let it rest for 5 minutes. Garnish with fresh cilantro and serve with lime wedges for an extra burst of citrus.
