Sweet Potato Tots

These homemade sweet potato tots are a fun and healthier twist on the classic potato tot, perfect for a snack, appetizer, or side dish. Ingredients:

  • 2 large sweet potatoes
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs (panko or regular)

  • 1/2 tsp onion powder

  • Salt and pepper, to taste
  • 1 large egg, lightly beaten
  • 2 tbsp olive oil (for baking)

Instructions:

  1. Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the sweet potatoes: Peel the sweet potatoes and boil them in a large pot of water for 10-12 minutes, or until they are slightly tender but still firm. You don’t want them to be too soft, as they will need to hold their shape.
  3. Mash the sweet potatoes: Once the sweet potatoes are boiled, drain them and allow them to cool slightly. Using a potato masher or fork, gently mash the sweet potatoes, leaving some small chunks for texture.
  4. Mix the ingredients: In a large bowl, combine the mashed sweet potatoes, Parmesan cheese, breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper. Add the beaten egg and mix everything until well combined.
  5. Form the tots: Using your hands, scoop out small portions of the mixture and shape them into tot-like cylinders, about 1 to 1.5 inches in length. Place them on the prepared baking sheet.
  6. Bake: Lightly brush the tots with olive oil and bake them in the preheated oven for 20-25 minutes, turning them halfway through to ensure even browning. The tots should be golden and crispy on the outside.
  7. Serve: Let the sweet potato tots cool for a few minutes before serving. Enjoy them with your favorite dipping sauce!
