SWEET POTATO HASH WITH FRIED EGGS

Sweet Potato Hash with Fried Eggs is a hearty and nutritious dish that makes a perfect breakfast or brunch option. The sweet potatoes are roasted until crispy and caramelized, then combined with savory vegetables and topped with fried eggs for a delicious and balanced meal.

Ingredients:

For the hash:

  • 2 medium sweet potatoes, peeled and diced into small cubes
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • Salt and pepper, to taste
  • ½ cup black beans (optional)
  • Fresh parsley or cilantro, chopped (for garnish)

For the fried eggs:

  • 4 large eggs
  • 1 tablespoon butter or oil

Instructions:

  1. Roast the sweet potatoes:
    • Preheat your oven to 400°F (200°C). Toss the diced sweet potatoes with olive oil, salt, pepper, smoked paprika, and cumin. Spread them out on a baking sheet in a single layer and roast for 20-25 minutes, flipping halfway through, until they are golden and crispy.
  2. Sauté the vegetables:
    • While the sweet potatoes are roasting, heat a large skillet over medium heat and add a drizzle of olive oil. Sauté the onions and red bell pepper for 5-7 minutes, or until softened. Add the minced garlic and cook for another minute until fragrant.
  3. Combine the hash:
    • Once the sweet potatoes are done roasting, add them to the skillet with the sautéed vegetables. Stir in the black beans (if using) and cook for 2-3 minutes to combine the flavors. Adjust the seasoning with salt and pepper to taste.
  4. Fry the eggs:
    • In a separate skillet, heat the butter or oil over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes. You can cover the pan with a lid to help the whites cook evenly.
  5. Assemble the dish:
    • Divide the sweet potato hash between plates and top each serving with a fried egg. Garnish with chopped parsley or cilantro for a fresh finish.

Enjoy this satisfying and wholesome Sweet Potato Hash with Fried Eggs as a flavorful breakfast, brunch, or even a light dinner!
